Welcome to Pacelli's Bakery

Hi, I am Gabby! I love to make breads and sweets, and did not have enough mouths to feed between me and my husband, so why not start a bakery! I make sure everything I bake for people is something I am proud to serve. Why would I make someone pay for something that doesn't even taste good?


But anyways, I am not your ~typical~ baker. I actually am an engineer...I have a Master of Engineering. Maybe that led to my knack for chemistry that catalyzed my affliction for preparing recipes. Sourdough is a living thing, and cake batter is just a formula at the end of the day...but made with love!

I started my business in 2025 and am looking forward to see how it grows. I started by working with local markets and vendors to set up pop-up shops. In 2026, I am now opening my own storefront at 1137 Jeffreys Rd, Rocky Mount, NC. If you have an event you want to order cakes or baked goods for, please contact me for my availability and estimates based on what you are looking for. 


If you have tasted my concoctions before, I hope you see why this engineer became a baker, and I hope you get a fraction of the joy I get from preparing the food I serve.
